What is actually happening to chaas in a bag
Chaas, buttermilk and lassi are cultured — live bacteria have already fermented the milk, and they do not stop when you pour it into a bottle. What controls the rate is temperature.
Chilled, the culture is slow and the drink stays as you made it. At 35 degrees in a bag on a Mumbai afternoon, it is fast: the chaas gets progressively more sour, then separates, and by evening it is not something you want to drink.
