Decide which product first
Single-wall steel is one layer. It is light, cheap, unbreakable and does nothing for temperature. For a school bottle or a giveaway where the budget is the constraint, it is a sensible product.
Vacuum insulated is two layers with the air pumped out. It costs more because it is two vessels rather than one, and it is the only version that holds temperature.

What to put in the spec so you get what you think you ordered
Name the wall. "Stainless steel bottle" is satisfied by a single-wall body. If you want vacuum insulation, the words double-walled and vacuum insulated belong in the purchase order.
Name the grade, and say which wall. Grade 304 is standard for food contact. The one that matters is the inner wall, and a spec that does not say so has left a gap.
