Stainless steel is iron with chromium added, and the chromium forms an oxide layer that stops rust. Grade 304 contains roughly 18% chromium and 8% nickel and is the standard food-contact alloy worldwide. Grade 316 adds molybdenum, which improves resistance to chlorides — salt water, industrial chemicals, coastal air.
